week. Btw, I've watched at least 5 other tutorials on how to make bimbimbap
and this was the one that totally caught my eye and made my mouth water.
Is it in fact one of those dishes that a little tweaking is allowed to suit
personal tastes or requirements without losing the essence of what it is ?
I can't eat mushrooms of any variety, so can I get away without having
those and still have an authentic experience ? Equally is there a
substitute you would recommend instead of mushrooms for people like myself.

+James O'Halloran Yes, Bibimbap can be altered to suit individual's needs/preference. Instead of mushrooms, you could add other mild vegetables. (e.g. //mykoreankitchen.com/2015/08/01/sauteed-korean-cucumber-side-dish/). If you prefer spicy kinds these two are also good alternatives too. +flawlessgenius as others are guiding you here, there are a myriad of non-dairy milks out there to buy...I would only also suggest you avoid the ones with an ingredient called "carageenan" ... Silk brand sells their almond milk without it. Just a tip & good luck! Sounds like you've made some great decisions towards eating healthy!
+flawlessgenius Hello I don't drink cows milk either and I Iike to use Soy Milk because it's one that can easily be available to me. You should try the Silk Brand or like Rice Dream. The are some other brands out there also have you seen other vegan channels? (ex: like +Sunwarrior or Jason Wrobe and there's so many more. I can't list them all from the top of my head) There's also hemp Milk, Rice Milk, Coconut Milk, Almond Milk maybe even cashew milk. You can also make your own milk like Raw Kristina and like in the raw.vegan not gross videos from taste made. Also for Soy Milk there's different ones like the unsweetened one or the original etc...
+flawlessgenius i think the best way to avoid milk is doing some research. Look up how cows are treated in the industry. Educate yourself. And if you don't care about the animals, check out what the dairyindustry does to the planet. Or just try plantmilk. there are so many different milks in the shops, just try and find your favourite :)
Try a cow milk alternative, almond milk is a favourite of mine, soy milk is also popular, it depends where you live, but I live in the UK there is a big selection of different kinds and flavours :)

You're welcome. Great idea with the spicy condiment. I didn't have it at the time but now, I always put a lot of Ssamjang in my bibimbap or any Korean dish I make for that matter. If you want it spicier, you can use gochujang instead.
