Hi Susan, i did everything the same as you..my dough over doubled in size
but when I picked it up to shape it into pizza it completely deflated!!
what was the reason for this???
Dough will naturally deflate, but if it seemed to have no shape at all it could be due to not enough kneading, improper shaping, over rising, or not using a strong enough flour (bread flour). Check out my pizza dough FAQS page on my web site for more info and good luck.
Holy Cow Susan, you are one strong woman! I had to use both hands to knead
the dough. I searched and could not find an answer to this question, why do
you cover it with plastic where so many others cover it with a tea towel?
and it took 3 tries to get my yeast to foam but nothing like how well yours
performed (sigh). hoping it will turn out decent it feels better now then
when I first started I think it was a little bit dry but I'll eat it anyway
haha
+Susan's Cooking School I forgot to tell you that I do have a thermometer and it was at 110 degrees but I didn't get anywhere near the foaming action that you did. I got better results with Fleishmans. really need a pizza stone. always comes out too flat. I can't even get close to a Costco pizza. :-( Might just give up and move on to your cinnamon rolls in combination with the Finnish recipes using the cardamom seeds. I have tried to do the cinnamon rolls about 3 times and was not getting any rising action from the dough but this was before I watched your video. next time I go to supermarket I'm going to buy a couple of different brands of yeast. appreciate your reply and you are still way stronger than I am. :-)
The dough dries out on the surface when covered with a towel. The yeast may not be foaming because the water is not warm enough. I explain more about this on my website: susanscookingschool.com, pizza dough Faqs page. (Btw- not as strong as I used to be)

First off she's Australian. They have different words and different accents then people in America do. Second, yes that's one way to make playdoh. You can also make it with cream of tartar and you can also make it by cooking, both are completely separate ways. But don't dis on her because she "talks weird" it just takes some getting used to. I once dated someone with a very thick Aussie accent. It took me a few weeks, but eventually I could understand him. To them, we have weird accents. To both us a person with a Asian accent would sound weird. So what?

I wrap my pizza dough in cling wrap then put it in a gallon ziplock and suck what air out I can. when you thaw it out at room temp, form your pizzza and it will taste just like normal :) the real trick is trying to get most of the air out and keeping your moisture locked in :) good luck!
