+gail jones You can do this in a crock pot, but I don't really recommend doing it on top of the stove because it has a tendency to burn on the bottom and that will make all of it have an acrid taste. You don't have to have a roaster, you can do this in a crock pot or a slow cooker. Thank you for the kind words, they lift me up on a day that has been hard on the internet. Hello, just a question if you're using apples peeled, why not leave half
the apples with peelings on. Since your using immersion blender anyway. For

My apples are bubbling away in the roaster. They've been on now for about 3
hours. They were very ripe apples. When do I blend and add sugar and

+crops4fun As long as the apples are soft and will easily mash against the side of the roaster you can blend them and add the sugar and spices then you will want to allow it to cook for at least three or four hours. I usually let mine go overnight because I prefer a rather thick consistency, but you can stop when you get the consistency you prefer.
At the beginning you said you added two cups water, later on when you added
the sugar you said you didnt need to add the water. Do I or dont I? I have
mine in the roaster now. Thanks!
+crops4fun Add the water. I was trying to make a point that in the end you want the water to cook out. I apologize for the confusion. Adding the water will help the apples to break down properly and also help the mixture not to burn or scorch on the bottom.

yah its alweese smart to leave a electric appliance on cooking when

looks very simple. I have 57 lbs of apples to go through in the next 5 or 6
days. So I'm going to be busy canning and making apple this and that. But I
knew I wanted apple butter to add to my pantry. Definitely a Thumbs Up for

+Vika Koshkaskaya Thank you for the info. We did sterilize our jars, but didn't mention it. We shouldn't assume that people know this. We have been canning for 40 years and it just comes natural and we forget to say every detail. We have never processed our apple butter, but to play it safe to make sure it seals, you can do what the Ball Book says. When churches make 40 gallons of apple butter and sells it, it never goes in a water bath and it stays sealed. Thank you for watching.

You'd have to use a big pot with a lid and keep it on low and check on it throughout the day, stirring now and again probably with a wooden spoon to make sure it didn't burn on the bottom!
