Hey BBQPB! I'm a college student in my first apartment, so I want to try a
lot more home cooking, but I'm really restricted on space, time and money
so I cant cook anything too big or pricey. I really enjoyed your Cornish
game hen video you guys made a while back, and I was curious if you guys
could revisit that with a new recipe I could try. I'm sure if anyone could
come up with another great Cornish game hen dish it would be you guys.

I use half inch sirloin porkchops, I put them in a pan with warm water to
defrost and also soak in sole water, put them in a bowl and pour out excess
water then let them marinate for 20min while getting the grill started,
sear 2 min then off the coals and turn them everytime u take off the others
off the coals. Keep them medium and they come out just as moist and tasty.
Never gets dry
Looks great! I only have a gas grill, since you aren't allowed to use coal
grills on the balconies in my apartment building, so it's not easy to smoke
stuff. Btw, about that t-shirt your friend is wearing, here in Norway
therapy is cheap because of socialized medicine, but beer is really
expensive because of alcohol tax, expensive logistics etc. Kinda funny how
it's the opposite :)

do you get those half inch cuts at the super market? that may be your
problem, i get those for fried chops, but that is more about the breading.
if you want good juicy chops they need to be thick, at least an inch.
this guy is they most patient guy in the universe because after 2 hours of
smelling bbq, i would die from dehydration -- my mouth would dry out from
drooling so much

do I refrigerate my pork in a brine and grill it if I'll use a grill pan?

+Kateryna_knits Sure you should brine the chops for at least 4 hours and then with a grill pan, I'd say 7-8 mins on each side depending upon how thick they are. Or you can also grill them until they have nice grill marks (3-5 mins each side) and then pop in a 350F oven for 10 mins or so to finish cooking through. Enjoy! :)
