Nicko is it possible to make a larger ammount of the marinade and maybe leave the chicken in the marinade over night to soak up more flavour. Of course crisping the skin would be a bit more challenging I guess. Like i'm no expert cook or anything but it was just a throught ^^. Or is the marinade that strong you really wouldn't need to leave it overnight?

@Kerokai im not Nicko, but if you want to leave it over night to soak up more flavours then i suggest you roast the drumsticks in an oven, if its done long enough in medium temperature, it is possible to achieve crispness all around. give you have a rack that will give the chicken some air space to let the sauce/marinade drip down.

No way.... Always brine your chicken in good amount of lime juice water and salt for about an hour then pat dry , score chicken like in video, and sear it a bit longer,for golden brown color,add chicken stock by half way, reduce down with lid , then chick will be cooked and lastly add cup juice and honey until glaze like

this is a great recipe, i make something very similar but with tiny chicken wings. i hate meaty drumstick, i get sick before i finish it. but yes, honey glazed mini wings are godly.

Looks good Rob. Try adding 1/2 lime, juiced 1 teaspoon fish sauce 1 teaspoon sambal, 1/3 cup seasoned rice vinegar to that chicken for an Asian kick. Happy holidays dude.

+Nosajjao yeah. but they are usually sold with another brand name. For example, Vater has another brand name which they use to sell their imperfect and unbalanced sticks. Still good for practicing though.
