What an all out nightmare. First, you should get your pan nice and hot
without the butter. If you're gonna use 100% butter use clarified butter
which basically means it doesn't have any milk solids in it. The milk
solids is the reason why butter browns real fast. Otherwise, use fortified
butter (50% butter 50% oil). Also, when you crack your eggs into your pan,
drop the heat down to low to medium. Lastly, you used way too much butter.
The secret is to use a special egg pan, and use light cooking oil that does
not burn like butter. Cook two eggs at the same time over medium heat.
Depending upon how you like your eggs cook longer or shorter before you
flip the eggs using the pan.., No spatula! I love your Gas stove! The only
way to cook in my opinion.
Butter provides more flavour but will burn the egg. Oil will not burn but
you may have a crispy edge. Very little butter/oil, medium heat and then
place a 'lid' of a sauce pan with a drop of water over the egg. one or two
minutes and it will be ready. good luck.
I use vegetable oil. Just enough to cover and grease the pan. Then just
drop egg in. Spinkle salt on. Once the base hardens, i stab the yulk with
the spatula to break it then i flip the whole thing.
something like vegetable oil would probably be better for cooking eggs if
you're concerned about burning grease. Butter tastes nice but it does burn
and gunk up.
