What else can i use besides eggs? I just don't like them besides they are high in cholesterol and some other bad stuff! This is just my way on what i do and don't eat. These really look great i i would love to this one day. If you can please let me know, thanks!

These look SO GOOD!!!! They are right up my alley! A, I love muffins & B, I love granola. One of my favorite breakfasts is a great muffin, which these look like they fit that category, and a serving of cottage cheese with fresh blueberries, sprinkled with a little sweetener & some cinnamon & a cup of tea. Oh, and of course a course a tall glass of ice water. Thanks for the terrific recipe.

+alyssa k I just find it helps to integrate into the batter better than adding the whole egg, especially if mixing by hand :) Thank you! These are one of my favorites!

Just made these...SO DELICIOUS! I get what people are saying about the aftertaste though. Is that the stevia or maybe the baking soda? Otherwise, two thumbs up from me!!

Thank you! Some stevia brands do have more of an aftertaste than others. I have found that truvia had less of an aftertaste but it can be pricey so I try to snag it while it's on sale :) one option would be to substitute some of the stevia with another granulated sweetener, like coconut sugar :) I am glad you enjoyed!!
