I think it keeps the rice from sticking if you do inside out style sushi. I've seen my local sushi place use mats covered in plastic too. :)

im confused..it was already a sushi mat..so why did you cover it..are you going to use that to roll sushi or to serve it on??

I had no idea how complicated this was. Thought sushi chefs just rolled it a few times in plastic.
