The narrator uses incorrect terminology. He speaks about "scoring" the pastry when he should use the term "docking" the pastry. i.e. making small holes in it to prevent it from puffing up too much or forming pockets of air.

You can but they will become dense. If yeast is a problem then add baking powder instead.

It gives the puff puff a nice crunch. Since cornmeal is gluten free, it also makes the puff puff less chewy.
