We pick our green tomatoes on the eve of a hard freeze. Today we use some of them to process green tomato relish. This relish is good on hot dogs and pork.
+eckankar Yes they are hard to find.....seems very few find value in green tomatoes....I have some ask from time to time if I would supply them with some for fried green tomatoes.....Thanks....

Hey Gary, nice video. The only thing is you now need to cover those jars in
a pot with boiling water and boil them for 15 min. Doing this kills the
bacteria for sure. That is the last step in the canning process. If you
don't do that you could be setting yourself up for spoiled food and things
like botulism. Pickup a Balls Blue Book of canning. You should be able to
find one at Lowes. That last step is very important. You can still do it.

Thanks but I haven't found that necessary in several years of making this
stuff. I think there is too much vinegar in there for the bacteria plus the
jars were sterilized and the relish boiled 20 minutes prior to putting them
in the jars. That's probably good advice anyway... Better safe than sorry.

Excellent Gary...I took Ur advice & made Brendans recipe (which he stole

Two things, I had the exhaust fan going because the vinegar boiling has
quite a pungent odor. The second was probably our pet Cockatiel who likes
to chirp when he sees the camera, lol. Regards, Gary
It's a great way to use up the green tomatoes, which is about all I get
around here, lol. The vinegar does create quite an odor while it's boiling
though so leave your hatches open... Regards, Gary
Hey, thanks Gary for doing the video. Tongs help to grab the jars. And a
funnel with an end the size of the jars help you when putting the relish in
the jars. Do you have a written recipe?
This is great Gary, my Mother has been asking me for a green tomato relish
recipe and I don't have one. I'll send this to her, I think she's going to
really like it, thanks!
Now I know why my sister-in-law's parents wanted all my greenies. We have
plenty left to give it a try and lots of jars. Can't beat the old recipes
from our relatives.
