Do you grate the butter in order to give it a particular texture, or just
as an alternative to melted butter? And for the step to double in size, how
long does that take?
+mrtodd3620 Whenever a recipe calls for small diced butter to be incorporated into a dough (like pie dough or biscuits or scones) I will grate the butter in- it is faster and PREVENTS melting from too much handling- it produced a course meal texture which is exactly what we want for this (and those) types of recipes
Can the poolish stay in the refrigerator for longer than 10 hours? For
