+B.L. Simpson - Vanilla extract/flavoring is optional, cooks preference. Same with nutmeg if you like it in your apple desserts.

I couldn't find Granny Smith so I used Golden Delicious and they came out great! And also make sure to add some vanilla.

In Alabama, we have a really strong ginger ale called Buffalo Rock.  I think I may try to make a pear  or peach version with Buffalo Rock.  If you ever get a chance to try Buffalo Rock, I recommend it but be warned it is very spicy, almost hot.

+murtaza shabbir Any lemon-lime soda such as Mountain Dew or 7-up should work.  Sierra Mist could also be good I think.  I wouldn't use Sprite as that soda doesn't play nice with other flavors for some reason.   I also wouldn't use any orange soda--it needs to be lemon-lime.  It is possible it could work with ginger ale but that would definitely change the flavor profile.

How do reheat them after they've been frozen? Microwave? I guess since they're so lightly browned you could reheat them in the oven, but would you need to thaw them first? Can I freeze them unbaked and then bake them frozen whenever I want fresh baked apple dumplings?

+Kristen Kruse Hi Kristen, Yes, let them thaw in the fridge and heat individually in the Microwave. If you want to do a pan then in the oven on 200 degrees FH.
