+Nibes000 well the key is in protein content as well. some american wheat flours are weak as heck when they are labeled all purpose and some are extremely strong protein wise. You can't have a good chewy texture with cake flour (low protein content) and etc... but Im not sure what the perfect protein % would be for mantous. Give it a go! :)
+MusingsofaJay♡ I think the key here was the kneading which gives the right texture. I will try any ways, just need to find a little bit of time tomorrow afternoon to do a batch of them. I will complain if they turn out awful . lol

+Domiiniiquefan90 lol if you live in China then didn't you see my bag of flour in Chinese? It is called medium strength wheat flour in Chinese I think if you translate it. To check the protein content of the type of flour you can just look at how much a serving is and then divide it by the amount of protein it says each serving has. You can leave it in the fridge for at least 12 hours (I left it ferment for 18 hours because I was too busy and it was fine)... so just do it over night and wake up to make the bread or so. I wouldn't leave it in the fridge for too long since the yeast eventually will run out of food to eat and etc. Its a pretty small amount so you don't need a large container. Also when i say pinch of salt I really mean a tiny pinch. Too much salt will not let yeast do their job.

I've never tried low fat milk, that was actually my big switch - from skim to whole milk, if you can't find Maltose in your local, 3 tbsp Lurpak Butter is worked out so good!
Just to be sure, Could you please let me know how you start and end? what kind of milk do you use? 1000ml fresh milk (full cream) + 250ml white sugar + 125ml Maltose 麥芽糖. Do you have to follow exactly?

Hi, I guess it will taste better if you chill it in the freezer for a while right before serving. If you add ice cubes, the punch will be too liquid. By the way, what is nutriment?
