Very Clear and Concise directions. My wife is a mayo person. Our son, daughter and I are both Mayo and Miracle Whip. We make Macaroni Tuna Salad and Potato Salad, what we call 50/50 Salad. It is half mayo and half miracle whip, three types salad cubes (Dill, Bread N Butter or Sweet and Kosher Dill). Sometimes my wife asks for it to be 75% Mayo and 25% miracle Whip. I made Mayo today, but I think I will add in 1 to 1 1/2 tsp sugar next time to make a 50/50 Mayo Whip. I think 2 tsps sugar will be to much for my wife. If my Potato Salad is a little wet, and I am serving it right then at dinner. I will make a little instant potatoes and mix it in to thicken it up. This is so it looks like and taste like it set over night. If my Macaroni Salad turns out a little wet, I also thicken it. I use corn starch and take out some of the wet dressing and mix it with the corn starch and then mix it right back into the Tuna/Macaroni Salad. I have used instant flake potatoes mixed with hot water instead of the corn starch. You have to spread the instant potatoes on a plate and put it inside the freezer to get it cold. Do not add instant potatoes flakes into your Potato Salad or Macaroni Salad. Make the instant potatoes with boiling hot water as per directions and do not add butter or salt or pepper. You are going to spread that on a plate and put it into the freezer until it is cold. Then mix it into your salad to thicken it up.

I used a stick blender and a tall plastic container and canola oil. I blended it so long it actually got warm! It never thickened at all. And that was the last of my oil. I'll buy more and try it again : )

+seattwa I had the same problem today. It was my fist attempt at making a home made version of Mayo. I remembered that some people use an extra egg to have extra thick, so I added in another egg and another half cup oil. It instantly started to turn that thick look at the bottom and work its way up the mixing jar. I was able to add in more ingredients on the fly just guessing what half ingredients might be and it turned out very good.So if I have a problem with thin or not thickening problem again, I know I can add in an egg and a little more oil and ingredients and it will be good to go.

+seattwa HHmmmm, white vinegar and lemon juice close to what I used I'm sure, See, it should start thickening up pretty quick, I honestly don't know if this can be rescued with another egg yolk like I did with the mayonnaise. Sweetie just get your oil and try again, it should start thickening up just like in the video. Once you make it once, you will never want any other kind, I am so sorry you had this trouble darling. We will get you through it though!*Remember, add egg yolk first then oil last, than at first pulse only from the bottom, do not try to mix up and down, all at once, then slowly start bringing the stick blender up and mix from there. Just enough to blend all together, then stop.

+seattwa used another egg and 1/2 cup of oil also, some people add in another egg to make a thicker spread. I had to add in another egg today and it thickened up like it should almost instantly when I turned on the hand mixer. I also added in some more of the ingredients. I just spit the ingredients to half again what was called for.
