+Aaron James Please note that this is Vietnamese-style Ragout, not French one :) We neither caramelize onion, nor add celery. The French did inspire us, but we make it our way, hehe
I made this recipe & found the ketchup to be too sweet for my palette. It
smelled like ketchup, even after simmering. It did not evoke memories of my
Vietnamese childhood. I felt perhaps it was quite the epic fail for me.
Perhaps next time I will try it with a non ketchup tomato sauce & see if I
can cook like my mom. Or I'll just have to go out to eat. Alas.
+Aaron JamesSpaghetti, Pinoy style, is a few miles away from authentic Italian or even Italian-American spaghetti. It is made with ketchup, a lot of sugar and most of all it has...of all things.....hot dogs in it....LOL. It lacks the critical ingredient of authentic Italian counterpart....garlic and oregano. Like you I am not one bit thrilled with it.
I did not try the recipe, the Ketchup would have turned me off instantly. Something i have noticed with in all Asian cultures is the can not disseminate between Tomato "sauce" and Tomato "sauce" if that makes sense? There is Tomato sauce for pies and sausage rolls, but for Stews, spaghetti etc.. we use Tomato Puree (sometimes known as tomato sauce, hence confusion) I had spaghetti a Philippine woman made, and she used "tomato sauce" and it was horrendous, mind you she made great dishes otherwise, some really great noodle ones. I have a feeling this is where the problem of this dish comes from. I could not think of anything worse to put into a stew, ragout, goulash etc..
Ragout IS a stew, although there are many variations. She never claimed this is a traditional French ragout either, as this is a Vietnamese cooking channel. Vietnamese adopted and modified many French dishes during the colonial period, and this is one that is eaten commonly in the Vietnamese home, and which we all call ragout (although most people use tomato sauce and not ketchup). You might be thinking of Italian ragu sauce which is eaten with pasta and is totally different.

make. It is called Glass Noodle Stir Fry with Peppers, Napa Cabbage,
Shitaki and Peanut Sauce (Goi Mien Chay) I can't find the recipe for it.
Is that a recipe that is included somewhere?
