Spanish Style Aioli - California Olive Ranch
How to make spanish aioli using only garlic, egg yolks and extra virgin olive oil.
About the alioli, it’s a bit tricky. You need the yolk to be room
temperature. Dice and smash the garlic (1-2 mins), add a pinch of salt and
when you have some kind of a smashed paste, throw in the yolk and start
stirring always in the same direction and at the same time pour olive oil,
but the pour needs to be almost drop by drop (use a squeeze bottle or
something with a small mouth) and this should last 5-7 mins until you see a
consistent texture and then depending how much you need you can keep
stirring and adding oil, it’s a bit hard on your arm, but it’s so good!
