+steele829 offsets and kamados are sorta like comparing apples and oranges. Either of the two will do your ham or rack of ribs. A decent sized offset will possibly even give you more space to cook on than a kamado. The versatility of the kamado can't be beat though. It will do everything an offset will do plus high temperature grilling and searing. The kamado also doesn't require nearly as much hands on fire tending and maintenance as the offsets do.

+Ricardo Carrion I never claimed that this is 'authentic' in any way. It's MY take on carne asada. There are numerous ways to do it. This was my choice. I'm sure you have a 'real' recipe as I have about 10 of them in my files. As for grills, those who know how to control their grills can adapt what I do here to any grill they may have.
