I'm hoping to make a batch of these for Christmas! I just wanted to ask, do
these need to be refrigerated before handing them out as gifts? Or are they
shelf stable? I have attempted chocolate covered pretzels before, but I
believe the chocolate must have had the blooming issue going on, because
they didn't look nearly as pretty once they had set up as they did after I
first dipped them. I am new to this and didn't realize it needed tempering!
So your video is a HUGE help, I can't wait to try again! Would this
particular chocolate be good for dipping Oreos as well?

+A McCall Hi A, Frist, never store your chocolates in the frig. Going from a 40 degree frig to a 70 degree house causes the chocolates to condensate and get sticky, also this temperature change may cause blooming. Find a cool closet or cabinet in your home. They are shelf stable. Check the expiration date on the pretzel rods, that will give you an idea of how long you can keep them. Be sure to keep them in an airtight container. If you're having blooming problems, I have a couple of easy fixes. Stir, stir, stir. Stir your melted chocolates often. Blooming happens because the ingredients in the chocolate have separated and need to be mixed together again. Cool your chocolates quickly. After you dip a tray of pretzels, for example, get it to the frig quickly for 10 minutes. The longer the dipped chocolates stay at room temperature the more chance of blooming. The products I use and teach do not need tempering. They are call Chocolate Compound Coatings. (not candy melts). You can find them at most cake and candy supply stores or on my website. I recommend them for everything, Oreo's included. They are an excellent choice for the home chocolatier. Simply melt and use. If you prefer to use regular chocolate that needs tempering , that's wonderful. One last thought, most craft stores sell 2x10 inch cello bags, specially made for chocolate dipped pretzels. They are perfect for keeping the pretzels fresh and giving individually. This my be a good option for your needs.All my best, Sonia
+Em Porter I'm in agreement with both. Chocolate chips need to be tempered and that can be a little challenging. I recommend Merckens Chocolate Compound Coatings, or a good Chocolate coating. Available at cake and candy stores and some gourmet kitchen shopps. Also check out my website.My thoughts on chocolates for the home kitchen: In every situation regular chocolate is the best, but tempering chocolate, as I mentioned, is tricky. To avoid tempering and still make a great product, chocolate compound coating are the next best choice. I used them for twenty years with I manufactured chocolate gifts and treats. Candy melts have whey in them and do not preform or taste nearly as well. It's worth a little research to find a local supplier for Compound Coating or an on-line source.All my best, Sonia

+Amanda Rossmeissl Hi Amanda, it depends on how heavy you coat the pretzels but, as a general rule here is the math. .05 ounces (1/2 oz) chocolate per pretzel times your amount (170), divided by 16oz (one pound)..05 x 170 = 85oz divide 16 = 5.31. You'll need 5 pounds, be safe and get 6 pounds. Check the weight on Wilton's candy melts, I don't think they are pound bags. I'm not sure how often you use your chocolates but, I always keep extra around just in case especially this close to the Holidays. All my best, Sonia
