Even with fried rice, Japanese custom, at least in my family, is to serve
at least two (even if they're super tiny for just a sample) because one
scoop/pat is for a dead person. I've had my knuckles rapped with the rice
paddle for asking for only one, ha!
+Luney Boo Actually in China, specially Cantonese spoken area, theres a traditional custom which is being humble/Contentment . So if you took 2 pat of rice , that will be regarded as greedy/impolite . But no worry, you can still get as much as rice you want, finish one before you get more :)

I guess Im a little old school, I use what they have at the table. I grew up eating this dish at the old Sun Lok Kee on Mott St back in the day. I sadly have to say I have not found a decent place that makes this dish. I go to Noodletown or Big Wong now to eat it. If you have a suggestion on where to get a good plate of this please share.

+David Stringer People would eat the fat behind the eye, not the eye itself. The cheek meat is also fatty, and good. For flatfish like this, there isn't much there. A decent sized fish, say a snapper, or even a whole roasted salmon, would have a good chunk of cheek meat and fat from the jaw and behind the eye.
