About salt intake. When first going on this diet people sometimes experience what is called the "Atkins flu". Headaches and feeling lousy. The move away from canned goods and packaged foods to real food greatly reduces the salt intake. Couple that with water loss in the early weeks of the diet, some people get the Atkins flu. This is generally caused by low salt intake coupled with greater salt outflow. Using extra salt or drinking bouillon will ease this. I have Himalayan salt in a grinder that I use to put a little extra salt on my foods. After a while one can decrease the salt. To get the recommended 2.2 grams of salt I have to add, which I almost never did before this diet. Just watched part 3 in which he mentions what I just wrote about.

+RonMac08 Yes. The great part about cutting the carbs our of the diet is that your body goes through diuresis (releasing all that extra fluid that is causing swelling and high blood pressure). This is actually a good thing. It is a healthy thing. Your body is restoring normal salt balance and blood pressure. However, during the transition period, which may last 4 day to up to two weeks, your body requires more salt. In the book, "The Art and Science of Low Carbohydrate Living," they recommend 3 grams to 5 grams of salt daily. This can be done with salt itself of with bullion. The addition of salt to the diet is temporary. However, the improved blood pressure affects and reduced swelling are long term, as long as you keep carbohydrate intake low. That is why low-carb should be a lifestyle, not just a diet you do periodically. You want the benefits of improved blood pressure "long term," not just in the short run.

+RonMac08 Been there, suffered it, now have Himalayan salt too. Very true and worth anyone going close to or into ketosis (very low carb typically <50g per day) taking note of.

These turned out pretty fantastic. I even cheated and melted the coconut oil a little first. Also slightly under cooked them for the extra moist factor (by 2 minutes).

They last for a week in the fridge and up to three months in the freezer :) But to be honest, I had a batch in my freezer for six months and they were just as good as the day I made them.
