I think most people use a food processor. If you do, make sure the blades
aren't skimming over the top of the egg yolks. Use more yolks, or a smaller
processor. Or, in between the first few dribbles of oil, stop and open the
processor and stir up the mixture with a spatula. It should start to
thicken and resemble mayonnaise very early in the process! If you don't get
it right in the beginning, you won't recover.
