Ingenius! I am so super late and I apologize. Work has been so nuts lately and I wanted to make sure I paid attention and not just 'listen' and do things. +Samantha June The extra gelatin firms up the final product so you can slice it and remove the flags. If you don't add the extra gelatin, you may not be able to slice it properly or remove the flags without them breaking. You could just add less water and adjust the recipe accordingly.
