I cook my steaks only 2 1/2 to 3 minutes per side over direct high heat if
the steak is about an inch or an inch and a quarter thick (rotating the
steaks about 70-90 degrees halfway through for good grill marks). His
grilling times are off. Medium rare is best for most people and that
temperature should only be about 125 degrees when done. I use a digital
meat thermometer to be as accurate as possible. It should never take more
than 6 minutes if they are on the grill over high heat for medium rare. I
can see it taking a little more time if you remove from direct heat after
turning over, but not as long as he is describing.
