+elimonjal The recipe I used did call for eggs or vanilla extract. I think adding the egg would make it very heavy, and it's not necessary because the scones rise pretty well. You can add the extract if you want. I don't think vanilla goes well with apples, that's why i put cinnamon. I hope you love them, they are very good!!
