I am in the process of installing my countertops in my new kitchen. I
installed my bar top just like you installed yours but when I push down on
the edge of the top the back doesn't seem to have adhered to the wall very
well. What can I do to secure it better

You could run a bead of latex caulking around the perimeter of the wall under the top to help adhere it better. The latex can then be painted to match the wall colour after it dries.

edges to match the top?

+ben_r_ Hi Ben, you can get sheets from a home improvement store, however, what they will have on hand (in stock) is limited. If you want anything other than very basic colors, you can have them order it for you (usually from the kitchen department). They will have swatches on hand to look at.
