Absolutely no water in the pan. I wrapped the water pan in foil, but no water. Started my fire with a full chimney of lit charcoal on top of unlit. With all three bottom vents wide open and top wide open, getting to 350 was not a problem.
I cooked until the internal temperature reached 160 which took right at 3.5 hours at a cooking temp of 350 degrees. There are quite a few variables that can affect cooking time, so make sure you have a thermometer to measure the internal temp of the food you are cooking to make sure it's done and safe to eat.
At the time this video was made, I was using a Maverick ET-73. I've since replaced it with a newer model, ET-732. It works great.
