@latviandude When you're using a knife that large and heavy, the cage helps
keep the bottle from shattering. It's mass takes up some of the impact.
I've got a smaller and slightly more elegant looking knife I use for
sabrage now, and when I use it I take the cage off, or at least move the
cage up and fasten it around the lip of the bottle.
Remember what I mentioned in the video and in the powerpoint I sent you.
Don't wreck the edge of something as nice as a sword doing this. However,
it's a great trick for the reception of a wedding :)

I always liked Lou Pepe Gueuze better as well but its been years and years
since I have had it. Hey man I have been looking for that one, it does not
get to AZ at all. I will keep looking!
Most of my recent opinions on some of these more "common" gueuze are based
on the blind tasting I did. Wish we would of had more beers in the mix, but
I hope to do it again in the future.

Yeah different batches = different result is the main thing I am saying. I

Bacchus brews are superb altho one is plenty. The Cherry one is superb a
nice one to drink after a heavy tasting brew to cleanse the pallet before
moving on to something else..
