I think perhaps it would have been best to "blanch" or "parboil" the sweet
potato. LOL I know this was suppose to be "dorm food" so no stove and kinda
raw, but I had a microwave and if it's just blanched it's still kinda raw.
You could always prick the skin and put it in on high for about 1 - 2
minutes. It would still be firm enough to hold together, but soft enough
for the spiralizer. But I find it funny that you'd think of all things
kitchen related, that someone living the dorm life would just oh so
casually have a spiralizer on hand! Just sayin.
+Edgy Veg Good on you! :-) My point was though that if you surveyed an average campus, I think you'd fine the ratio of those that had a spiralizer on hand would be slim to none. If you're going to call it a "College Dorm Recipe" you'd hope the majority of college students would already have the basic equipment on hand at the very least to make it. Your partner in crime, Nikky, her recipe fit the bill perfectly. While I'm sure the pad thai tasted fantastic, I'm not convinced it was in tune for the theme you were going for. Just my 2 cents worth.
