dann musst du zuerst wie im Video die Developer Firmware flashen. erst danach erscheint das menü. oder wo hängts?

You would have to put a new ROM on every time, luckily they don't come out that often! :) Good thing is you would get the update plus the benefits of the custom ROM!

I i were to root my phone (GS4) and put stock android on it i recieve updates or would i have to put a new rom on each time an update comes out?

It also gives you access to the latest android builds which the carrier will probably never release.
