I know this is pushing the caloric scale but I think adding a few morsels
of peanut butter chips with dark chocolate chips would take the scones to
the next level..

I actually use stevia for my coffee or oatmeal sometimes but have never tried it for baking. I'm not against it at all - just need to do some experimenting. I would guess it changes all the measurements, no?
If its not gluten free its not clean eating. Wheat plays havoc inside the
body, for everyone. Ever heard of wheat belly?. Just because someone is not
wheat sensitive doesn't mean it doesn't cause inflamation inside the body.
Do yourself a long term favor and substitute wheat flour with almond, rice
or corn flour..
Yes- I've read wheat belly. But in my C&D kitchen there is room for everything (in moderation). A little whole wheat flour here and there doesn't bother me t all… but like I always say, make it work for you;)

regular coconut milk like the cereal ones you get at health markets or is
it better canned?

I tried this recipe tonight for a bake sale that i'm doing with some other
people and it came out great. I changed things up a bit though and made
Cheddar Bacon mini scones instead, following the basics of this recipe.
