My son is on a low glycemic diet along with the gluten and dairy. What
other type of flour can I use in place for the rice flour and how much
would I use? The rice flour has to be used sparingly since it has a high
glycemic index rating.
+Kimberly Ross Good Morning Kimberly:)I have a few variations for the bread on my daughters website. The real advise I can give based on tons of experience (some really good and some really...NOT!!-lol) is give it a try. Yes, we have replaced the white rice flour with others in the bread recipe. First I tried replacing white with organic brown rice (which is slightly better for your son but maybe not as much as you might need), then we tried a bunch of different combos. I find the most success in the loaves that haves a variety of flours. (flaxmeal, millet, amaranth, brown rice ands oat for the 2 cups) keeping to the 1 cup starch as well. I would experiment maybe 1 1/2 cup oat and 1/2 cup brown rice(again if this is allowable for your son's diet). It is worth the experiment if it works! !! +Kimberly Ross Hi Kimberly! Before answering you I went and searched which flours are recommended to have the lowest glycemic index. Since half of them have gluten, and if we are sticking to gluten free we only have a few choices...BUT....one of them was QUINOA! So awesome! You can use the same amount of quinoa in this recipe as rice flour. Another site said Oat flour (which I always assumed was higher but it was there??!). I really like oat flour. Buckwheat was mentioned in both sites. I do like and use buckwheat but usually in combination with another flour b/c my gang doesn't like a heavy buckwheat taste. So maybe if you are playing around with flavors and alternatives for your some, you can do 1/2 buckwheat and 1/2 oat flour in place of the rice flour! I sure hope it helps and that you have FUN!.~Blessings
