Total); For boiling/simmering the tongue: 4 cups of water or just enough to cover the pork tongue inside the pot, 1 Thumb-Sized Ginger, 1 Tbsp cracked peppercorns, 2 pcs. These are two beef tongues that i have slow cooked and started peeling for further preparation.
Hey Mark, just saw this comment. Beef tongue is delicious. This was
simmered for 3.5 hours with water, salt, garlic, onion and bay leaf. I let
it cool in its own coming liquid to re-absorb some of the juices. It is
them peeled while slightly warm then you can chop it up for tacos or stew
it in some green salsa. Very delicious.

This was fascinating to watch, because I don't think I have ever had cow
tongue. It looked very nice and flavorful and I bet it would be great in
any dish. You know you have inspired me to try this. I love trying new
dishes and since the finished product was so great looking I think I would
like it. Thank you.
My kid loves lingua. His friends cook it all the time but this is the first
time I've seen it prepared.The first time I had it was in a Basque
restaurant when I was nine. What do you do with the outer covering? Looks
