i agree this is a veg for grown up, i used to hate to have this for
lunch/dinner when i was at school, but now i love it. i think the one i had
was of a different variety, it's light green and don't have the spikes on
skin, but it's got curves around it, and it's much more juicy, so it's
tastier ^^
+ochikeron -san in my area we don't have katsuobushi , believe me i already
search all over , it prevent me to cook many delicious japanese dish
because lacking of this 1 ingredient , so i wanna ask , for this dish (or
for other dish too if possible) is there a substitute for katsuobushi ?
here is how i like it , cut in very thin slices , with thin slices of
potatos and lots of garlic and burn the hell out of it so its crispy and
just a little appitizing bitterness maybe sweet potatos

I have not had the courage yet to eat Bitter Melon, but this meal looks
good. My main reason for not eat Bitter Melon is because its taste, but I
had learned that if you salt it first and wait for an hour. Next squeeze
the juice out using a towel, it will remove most of the sourness.
That is true, salt it , set aside for 1/2 hr , and wash it off. Do you know that bitter melon have health benefit ? they said it helps lower diabetic tendency . Thanks for watching.
I got turned on to bitter melon at an early age working at my buddy's
Chinese
restaurant. Eventually I learned cooking as a passion/art. Great stuff, I
have substituted
white sugar with maple syrup(Vermont) and New Zealand honey. I would
suggest chopping a quarter cup of green scallions and one egg for binding.
1/8 cup of corn
starch will also keep all the ingredients together. Instead of black
pepper I use Szechuan
black pepper corns(crushed). Also, one clove of garlic chopped really
brings out the
flavor of the finished stuffed bitter melon. My better half is Jewish and
I have turned her on to this unique and very flavorful dish - it is one of
her favorites now !!

Bitter Melon is definitely as acquired taste. Usually, it's acquired when
one is a child. However, I tried it as an adult and I found that I really
like it. Except that it has to be cooked with black bean sauce! I like
your recipe, but I didn't care for the deep frying. I think I'll probably
boil the Bitter Melon and short ribs first before using your recipe.

Once again thanks to Chef Lee , when it comes to authentic Chinese
restaurant cuisine and method of cooking , The Happy Wok site of chef lee
is my go to /how to site. His method is very simple home cook menu with an
authentic restaurant frill - the unique " it factor " that we always
associate on restaurant food. Maybe because Chef Lee is real chef who
happens to own his own restaurant in the past and he is just happy to share
his secret.
Thankful to chef lee for sharing this very healthy vegetable. It t taste
bitter but to most of us , it is an acquired taste to like it but most of
all it is how one cook it. This particular recipe is one of the best method
of cooking it. Bitter melon is known as the vegetable Insulin and it means
a lot to all those diabetic in the world . might as well enjoy the
vegetable and get the benefit. I for one can't eat salad everyday as much
as I like it . variety is the key.
