I hope I explain it well. My grandfather has a farm and we have been running it for more than 30 years. We don't slaughter chickens, but we sell the chickens to slaughters in the wet market. So here is the thing. You cannot behead the chickens because you want the blood to flow out of the bodies, like literally no blood remain in their veins. Therefore, when you enjoy the chickens, steamed chicken in particular, you won't see bloody bones even though they are cooked. If you see a cooked chicken but it's so bloody in the bones, that means the slaughters are impatient to allow the blood to flow out of the bodies, so they behead the chickens instead.

HMS Gloucester departed from Portsmouth Harbour for the last ever time today (22nd September 2015) on-route to Turkey where she will be scrapped.
