i had try this recipe, but the skin didnt rised and too late for vinegar rub. or maybe i should rub the salt and the vinegar at beginner?

+Stacia Vincentia Most important is to make sure the skin is dry before putting it in the oven, and make sure you make lots of holes on the skin.

May i know what you mean by max heat? You mean continuing roasting at 200 degrees until it chars?

+emopianograeme depend on where you are located you can get them from you local kitchen specialty shop, look for meat tenderizer or go on amazon look for Norpro Professional Meat Tenderizer.
