If you have a black seeds, you must remove them because they are not tasted. But if they are white and fine, there will be no problem. Actually the eggplant must be rosted not cooked. In syria we roast it directly on the flame and if you have a barbecue that will be ok. You must turn it continuously to be sure that all sides are well cooked. I used the aluminium paper because I have an electrical plate. But it gives the same result except you will not have the taste of roasting.

for "burgul" as it is spelt in Arabic, it doesn't need long time to be cooked because it is already semi-cooked during the fabrication. After boiling the sauce you add the burgul , move the mixture a little, return the cover, let it boils for 5 mns. then put it on low heat between 20 -30 mns. it will absorb the liquid, and have double volume. at this time it is ready to be eaten. bon appétit

Thank you for your reply,iam actually cooking this recipe at this moment(eggplant on stove). A friend translated parts i didnt understand. So my questions have been answered. Once again thanks,and i will be trying some other recipes of yours.(The stuffed zuccinies looks yummo!)

Just finished mutabbal,i think i may have over cooked the eggplant,mine mutabbal doesnt look as white as yours..... With the eggplant do you remove the seeds after cooking?... I have never cooked eggplant before,so next time i will take greater care.
