I find your voice easy to listen to, but I would like to know, when I
siphon from the bucket to the demijons, do I stir first? do I include the
sludgy stuff on top? please help. also, I live in Armenia, so I can't get
anything fancy, instead I'm using non toxic aquarium silicon, plastic lids,
and tubes to exit gas from glass jars through a solution, should it be
vodka since there obviosly wont be a lid on the exit bowl where the tubes
lead the gas out the jars? I realize that's a few questions but please
answer because I'm on bucket day 4. thanks sooooo much for your help
+Tyler Young The sediment that collects on the bottom is mostly dead yeast so try and avoid it when you siphon ('rack it', as it's called) into your container for the secondary fermentation. You don't need the sludge on top, either as there will be lots and lots of live yeast in the liquid already.You can use vodka to vent the gas through but it's not strictly necessary.
+quiry land I can tell you're new to brewing, so let me explain. The yeast bacteria convert the sugar into alcohol. They also create CO2 as a byproduct, which is why fermention should never happen inside a sealed container. Hope this helped.

+Stephen Elkins - That could have been So true! Luckily, my neighbor threw that fan away, and I recyled it. My wife did get mad at me though. I first tried it in the kitchen before I realized I needed to add the splash guard on top. It worked really well, but send apple juice and chunks all over the window, cabinets, ceiling and floor. That for me was the worst job. It was cold wet and sticky. I think that
what was so bad for me was that there were only two of us making as much
cider as these people were making. Unfortunately one of us was the boss
ordering me to do multiple jobs in the mill while he was just pulling the
lever that put the crushed apples in the cider clothes. Nineteen years of
that crap. I quit after that.
