You could make Roadkill Jerky much the same way. It's all about fresh ingredients isn't it.

I wish I didn't have an aversion to killing fish. I love to eat them as long as someone else kills them. We have great salmon and halibut fishing here. I would make salmon jerky for eating year round. I never get tired of salmon.

I could have dehydrators running 24/7 making deer jerky where I live with the dozens of fat deer that come through my yard every day.I would just have to find seasonings that don't give me a headache. No msg like products.

@SKEEZIN08 dude, I had the same thing happen to me last time i made beef jerky. I have two theories, probably just talking out my ass, but I might have had the temperature up too high the second time. Also, I used significantly less brown sugar in my marinade the second time. Might have just not made the nice caramelized layer to keep all the delicious goodness inside. Again, i'm probably just talking out my ass.

@kylethelincey It depends on your seasonings/marinade, cut of meat & thickness. I use High Mountain Jerky Cure & Seasoning $7.00 that makes 15 pounds.

Sure was lean, no fat at all in it.  I just had to cut out some grizzle bits in it, but apart from that it was pretty good.  I'll post a video about it later on this weekend.cheers
