Then its select beacause that's the low price and low quality of meat. Choise is the second best and usda prime is the number one

I found after cleaning and before slicing wrapping it tightly into a sausage shape then twist the ends like if you were wrapping a large tootsie roll with cellophane helps keep it in a nice shape and gets a more even cut.

Anne restaurant supply a local chain that you can buy wholesale meat is a great way to go. Next to that can never go wrong with buying whole beef tenderloin.Trim it, cut it, wrap, and save a whole lot of money. If you think you could eat really good for just a little bit of money that $25 you got a whole stack of really nice looking marbled steaks. That's using your head, and kind of thinking you can take that to the bank!
