I stopped at your channel and watched the videos, nice fish. I've been a guide since 1990 and my requests are partially based on the end product. I doubt several very wealthy hence smart people could all be wrong, the video heading is a bit misleading but these are not the fish I caught nor a typical cutting table or knife. I just showed up at a friends house and they recorded me and uploaded it. I see you are on the West Coast, lets meet sometime I'd love to show you my other skills.

To watch a real pro in action search youtube for Copper River Salmon in Cordova, Alaska and go to the 2:30 mark and watch Ireneo in action. He can easily fillet 4 salmon per minute cleanly and with minimal meat loss. There is no need to gut a salmon you are filleting unless you are saving the skeleton and collars to smoke. A sharp knife and the backwards cut on the second side are the keys. In his prime Ireneo could fillet 6 to 7 fish per minute.

First of all you should have bled the fish by cutting through its gill when it got caught and you would not have all that blood which will give you a bad taste when cooked. Also check out RCAFDC3 video on filleting salmon with the guts in and notice the lack of blood. The video was done in 4 min to show the proper way to do this type of fillet. However filleting this way can be done in half the time.

Yes well I have been a fishing guide in Haida Gwaii for many years. Most people are inclined to want to kill as many and the largest they can where I am not. These fish were caught by my friends so I filleted them. Don't kill Cod, and don't lie to me and say it's your favorite I won't help you catch them anyway.

@bigbill262 notice i didn't rinse the fillet after I filleted it? spraying water on the fillet is ok for meat hunters. it also injects air via the water and the water itself ... this is unnecessary when done my way which proves superior in taste and storage in the freezer.

Yes he is awesome, I am using a kitchen knife on a little tiny cutting board... you can't expect much. The fisherman that charter my boat will agree my fillets are up there with the best, I don't spray with water. I will try to video my process when I fish again.

i think your final product was fine, everyone is a critic or they just cant fillet a fish, but the best one i have seen on here is SHAY MASTER SALMON FILLETER, check him out, but you still do a better job than i can, i mutalate the second side

If you rinse the fish in the tap water the fish will have that "fish smell". the only way to avoid the "fish smell" is if you use well water (without chlorine) then city water. the chlorine kinda ruins the meat imo. nice filleting though!

Why would you use a kitchen knife to fillet salmon instead of a real filleting knife. Watch RCAFDC3 video on filleting a salmon. Oh and also bleed your fish as soon as you get it in the boat you'll end up with a cleaner fish.

should be bled, gutted, and gilled shortly after catching. that's the best way to ensure good quality meat.
