Use a vegetable bouillion or just water instead of "white stock". It helps if you add ginger to this bouillion to give it a great flavor! Then, do the cooking as indicated in the video, non different. Top with whatever vegan protein of choice, whether it just be roasted seeds or nuts or some sort of tofu/tempeh. :)

nice, a friend of mine did similar mileage on a fixed gear here in California, there were definitely hills too. Didn't have any problems since fixed is so simple and minimizes things that could go wrong. My only tips would be to have a flipflop hub where you can put a larger/smaller cog on your non-drive side, in case you feel like you need a different gear ratio (probably not necessary since you're riding so flat, but you never know). And also to make sure your bike fit is absolutely perfect and your saddle is ideal, I think the real problem with fixed gear is it amplifies any errors in bike fit so you gotta get it right otherwise the knee, foot, back, etc pain starts popping up on the longer rides

all flat bro.. over 300miles, 80ft is our highest point.. charity event on fixed gear so not battling strava or mamils (middle aged men in lycra)
