Yeah well... That way you're also guaranteed to be paying far more for the
same wine.
I understand the restaurant's position, of course I do. It's a nice margin
they get from selling their wine (often 100% profit).
A really thought out list of wines or sommeliers only apply on a given
number of restaurants, certainly not the average one.
So if I'm going to an average restaurant, and want to drink an excellent
wine (assuming I trust my own tastes), I'll very much prefer to take my own
over having the same one or a similar one for twice the price.
