I have used the same method of using the old bearing to press the new one in. To avoid the old bearing from getting stuck in the bearing carrier, grind a few thousandths of an inch off the outer surface of the old bearing. Also note that the inner race of the old bearing should not be pressing against the inner race of the new bearing. I think that is a relatively common failure on those throttle bodies. I had to change the bushings one time with a kit that I got directly from Bosch. It was a hassle just getting the throttle body out because one of the bolts is in a position that makes it nearly impossible to get to. The guys at Bosch laughed when I mentioned that. They said that fought with Porsche a long time, telling them not to run the injection lines that close. I finally got them out and replaced and as far as I know the car is still running.
