It's made with Versa-Whip, which I don't think is generally
available(certainly not in my area). One of the concepts that I'm playing
with, if you're interested in trying, is the addition of orange flower
water and orange zest to lightly-sweetened whipping cream, to create a
similar effect. There are a million and one tutorials on flavouring
whipping cream online. Perhaps you're interested in trying that. Or perhaps
Versa-Whip is more easily available to you.
I'm aware the original recipe used scotch, you're missing my point. When
you start changing the fundamental nature of a drink, you should change the
name. If the experience of the drink is different, it isn't the same
cocktail. You can sub tequila in the original recipe, trust me, and keep
the integrity of the drink, and that's a huge change. This version isn't
even close.
Usually these Epicurious videos are pretty good, but I've watched quite a
few of the ones on drinks, and not once have they made the drink using the
proper recipe. What's next, "rum & Coke" only "for a better flavor, let's
use Cachaça & Pepsi, with a twist of lemon"? Generally this channel is
pretty good, but these drink recipe videos are terrible.

Agreed, this is not a blood and sand. I've literally seen a more authentic
recipe for this drink that substitutes tequila for scotch (the smoky flavor
being similar in both spirits). I'm not saying the drink is bad, I'm just
saying it isn't a blood and sand.

your cursor on the videos to the right. Then just hit play on the queue bar
at the bottom of your screen, that's the way I do it. Hope that helps.
The little post concerning the beer in the video has a little error it's
not Unibroque it's Unibroue. I love their products :D This cocktail seems
interesting.
Just use egg white, it will give the same effect and is all natural.

If you can find Guittard brand chips, their semi sweet are perfect for
sauces like this (also for hot chocolate and fondue)... they are expensive
by the box, but I've found them in bulk bins for around $3.20 a pound (in
Seattle where I live, that's cheap... easy gluttony)... otherwise,
callebaut bittersweet, while not cheap, will get a good result for this
(the passion fruit juice is very sweet--canned at Asian markets or in glass
jars in American spots) which is why they don't use sweet chips.
this seems like it would be yummier with a chocolate-raspberry sauce. But
