I guess you would have to reduce the temperature by 50F for the same amount
of time in the original recipe for the cookies to cook through. This would
prevent excessive browning as well.
Just noticed you used a wire rack. Sorry, my bad. I missed the start of
this video and only watched from the soggy bottom bit. A small mesh wire
rack is perfect for biscuits if you can find a couple that fit. They let
the heat get under the biscuits. I put a sheet of oven paper under them
until the firm and then turn them out on the rack. If you have two you can
cook two batches and just swap them from top to bottom when needed. Using
the extension ring keeps the heat further away and slows down browning.
