Thanks so much for sharing this Carol! You answered all of my questions and
thanks for providing the printables. Would you mind perhaps sharing some of
the "easy" and "meatless" meals you make. I'm trying to come up with a new
menu plan because my darling daughter is my picky meatless eater.
Fortunately, my son eats everything I make and even sometimes compliments
it! :) I've started doing the simple switchup meals (pasta with different
sauce, or tacos with different meats). I try to make meals that C can eat
parts of. If I make anything with a sauce, I always have to reserve part of
it as "sauceless" for her and without meat. Luckily she's a good veggie
eater, but not so much with the fruits. She likes plain rice and pasta, but
not potatoes. Her alternatives when she doesn't like any part of my meals
is either a turkey hot dog (no nitrates and uncured - the only meat she
will eat) with carrot chips, or a Totino's cheese pizza, or just bread and
butter (she loves this!) with a veggie or fruit. She doesn't like chicken
nuggets except from McDonald's. So do you have any other suggestions for
simple meal "alternatives" that you use in addition to those easy and
meatless family meals? Thanks! -Jenn
I'll put together some of the meals we do as alternatives with Joanna, just give me about a week, LOL. I think it's important to understand that even if they are eating the same items over and over and over, that's okay. I was a very picky eater growing up, and as an adult I will now eat a huge variety of items. Palettes change over time. I would eat, pasta, rice, mac n chz, grilled cheese and chicken tenders on rotation, and I'm not even joking!
