I am a culinary student, and I love watching you cook, as for skimming,
that's just what it is called...skimming. the stuff that floats on top is
scum.funny but true. love your show...so many topics!
Made this with 2quarts of chicken broth.. Came out waaaaayyyy too salty.
Water is probably the best bet. Haha
Or maybe half and half but definitely not 2 like the recipe says (if you
choose to go that route). I didn't even add salt.. Just chicken broth.
Other than it being really salty the way I made it, this is a fantastic
recipe. I can definitely taste the potential. I just went out making it the
wrong way. Haha
Thanks for the recipe. :)
+Joshua Riggs Stick to stock instead of broth. Broth will be salted enough to enjoy out of the box, so as you cook those bean, the liquid will evaporate, plus the salt from the sausage and hamhock, and you'll have quite a bit of salt, and in your case, too much.
What type of kidney beans do you use? I only ever buy the canned stuff that
looks way redder than those ones? (guess the skin is on them?). But this is
Australia I am from and only ever way I really buy kidney beans lol. If
they are canned with liquid inside them, do you still soak for 24 hours?
+ZeliardFTW I agree with zane, use dried beans. This recipe doesn't work with canned beans because you wont get that nice creamy sauce, like in the video. You'll basically end up with beans in water.
So i figured i could shorten the cooking time by raising the heat. I ended
up cooking the Beans about 2 hours on medium simmer and it came up only
partially cooked.
Anyone can help me figure out why?
+max silbert I can't be positive, but most likely you do, since bay leaves don't melt into the dish but stay their leafy selves... You could probably keep them in to continue to enhance the flavors of the meal and pick them out if they're in your serving, but up to you. Hope that helped!

Hi, I really didn't get the reason why you put the chicken breast in the
hot water... Is this step mandatory? What do you use for putting the oil in
the wok... How is it called? Thanks!
+Marc Schneider That step is to give the chicken a velvety texture, it is not mandatory. It is a bottle with a pour spout. Some salad dressing bottles have them.
I'm not Chinese but I live in China: this offends the hell out of me. It's
tantamount to an Asian person trying to make an authentic burger and at
every turn getting each element of the process just plain wrong. Have some
respect: learn to stir-fry properly (from someone like Ken Hom if you must)
or get off the pot.
That's racist of someone in a minority to say, and quite frankly he can cook his own version how ever he likes. He doesn't need your approval. I'm pretty sure he didn't ask for it.
