Review of Cedarlane Eggplant Parmesan: Freezerburns (Ep344)
Cedarlane does a great job of bringing great healthy dishes to the freezer aisle. Then again, eggplant is not an easy thing to do. Will they be able to pull it off?
I just had this for lunch. Mushiness didn't bother me - dome of it actually
held together. But there were weird hard pieces that I had to pull out of
my mouth. Either it was hard eggplant skin or zucchini skin. That part was
kinda gross. Otherwise the taste was great, I agree with you - 3 out of 5.
I love eggplant grilled, parmesan, and cooked in thai or chinese food. PF
Changs has a GREAT eggplant dish - it blows past mushy to melting in your
mouth. Try it!
I like baking the eggplant, let it get a bit crispy on the skin and burned.
Then I let it cool and smash it up in those Asian grinding pots. I add
garlic, peppers, herbs and such. Then after it is complete, I scoop ot out
and eat with rice! I just love it because that's how Grandma taught me.
Love freshly made eggplant Parmesan. If you skin the eggplant first you
don't have to worry about it being too tough. I make a home-made tomato
sauce and use that for this dish. Delicious!
