Please don't find it unusual that I cater to the tastes of my audience. I
accept all my readers/viewers and try to reach out to them where they are,
not where I am. I am trained in natural products research and understand
what foods do to our bodies/brains quite well. I eat a very clean diet;
however, not all of my readers are "there" yet. I don't judge. I try to
help them along the path to optimal health in their own time, in their own
way. What is correct for 1 is not necessarily so for all.

is so inspiring, but I do have one concern, it is for your health and it is
a request, please, please, please upgrade to stainless steel pots and pans.
There is irrefutable research relating non-stick surface coating, to
intestinal cancers. They say that it is only when it is scratched, but the
sugar would be abrasive as when you stirred it at the beginning....
I digress, While we would both agree sugar is bad for our bodies and immune
system it wouldn't " do more damage than someone with a gluten allergy
having gluten" The word allergy has many spectrums. People tend to shrug
when they hear "Allergy", but for some of us a bit of wheat could mean a
Epipen or ER, sugar is bad for everyone allergy or not - It just so happens
I plan to eat sugar every now and again and not care! :)
Hi Gigi. I don't know what happened. I made the recipe exactly to your
recipe. I cooked til 234 and then let it cool to 125 before stirring and it
was quite greasy and I went to continue to stir and it seized up! WOULD YOU
HAVE ANY IDEA OF WHAT COULD HAVE HAPPENED? I ended up breaking it with a
knife and it was into crumbles which tasted delicious but could not be used
as fudge. Thank you for any help you could offer,.
The words Gluten free and Vegan don't mean "healthy"... A recipe like this
that is Gluten Free, Soy Free, Nut Free, Dairy Free is for people like
myself for have allergies to all of those foods, so while the average
person can enjoy a guilty treat like fudge without having to put much
thought into it, some of us have to search the globe for recipes and in the
end make it in our own kitchen...
Coconut is only considered a "nut" by the FDA/USDA for categorizing
purposes. Botanically speaking, coconut is a fibrous one-seeded dry drupe.
Therefore, no, it doesn't defeat the purpose of "nut free". As for honey or
agave or other liquid sugars, get in the kitchen and experiment your heart

I understand .... It is hard trying to find these things. But I still find
it unusual, as the sugar would do more damage than someone with a gluten
allergy having gluten.. and not even know the damage is being caused. I
would love to know how this would taste with brown cane sugar. I may have
to try it. Thankyou.

do, we need options that do not threaten our immune systems if we have

Be sure to use the same brand, Thai Kitchen, full fat coconut milk from a
can. It makes a big difference if you do not. Please also go to the website

I'v just made it and its reallly thin, I'v copied everything in the video
exactly - only thing i can think of my coconut milk looks runnier than
yours. Any suggesions on how to fix it? Its not setting. :/

I enjoyed your video and instructions. However I find it unusual that you
go to the trouble of vegan and gluten free etc and then you use white sugar
which is highly toxic and poisonous.
